Anticipation filled the air as we excitedly received an exclusive invitation from Sunglass Hut to attend their lavish brunch, featuring the culinary genius of chef Matt Manning. This exclusive event was reserved for the media, where luxury was not only showcased on stylish plates but also in the form of trendy shades.

Manning meticulously crafted a menu inspired by some of your favorite sunglass brands, resulting in a spectacular six-course dining experience. Let’s take a glimpse into this indulgent journey:

Canapés

(Versace – Pop of Plum) Drawing inspiration from the prominent medusa medallion and a bold pop of plum, Manning presents a tantalizing Beetroot Hummus accompanied by Sago Crisps and Purple Baby Beetroot Shavings.

Amuse

(Persol – Handcrafted Excellence) Embodying the essence of “For The Sun,” Persol stands as one of the few luxury brands that still cherishes the art of handcrafting. This course introduces Ostrich Tataki with Orange, Salsa Verde, Sweet Potato Chips, Teriyaki, and Parmesan to ignite your taste buds.

First Course 

(Versace – The Key to Life) In a world dominated by deep fakes, avatars and AI, we yearn for the enduring value of authentic materials. The first course unveils a Prawn & Coconut Black Rice Risotto with Sweetcorn Puree,

Radish & Prawn Bisque, paying homage to the GRECA pattern found on the temple of Versace sunglasses, symbolising the eternal flow of life.

Middle Course 

(Tiffany & Co. – Breakfast at Tiffany’s) Chef Manning invites you to experience a twist on the iconic “breakfast at Tiffany’s” concept. Pan-Roasted Scallops with Cauliflower, Black Forest Ham Velouté, White Chocolate, and Macadamia capture the essence of Tiffany frames, combining bold acetate with a subtle profile reminiscent of Hollywood glamour cues from the 90s.

Main Course

(Burberry – Quintessential British Fashion) Reflecting the notion of looking good, feeling good, and making a positive impact,  Manning presents a delectable Roast Loin of Elgin Lamb with Braised Neck Cottage Pie, Baby Turnips, Smoked Mash, Spinach, and Lamb Jus. This dish pays homage to Burberry’s fashion codes of the 1960s and 70s, known for their bold and oversized shapes.

To Finish

(Burberry – Understated Luxury) As the grand finale, we delve into the realm of understated luxury, a hallmark of Burberry’s highest-quality pieces.  Manning creates a harmonious blend of textures using Raspberry Sponge, Honeycomb, Strawberry Meringue, and Earl Gray Ice Cream, offering a visually luxurious dessert with a touch of minimalist style.
